Position summary
Description
Oversee ship and
Island Beverage operations
Coordinate the bar production levels to ensure an efficient operation while
meeting budgeted goals for bar costs; Manage liquor cost within
budgets/forecast
Responsible for promoting salesmanship and revenues generated
Manage daily operations: crewing, scheduling, repair and maintenance,
cleanliness, organization, service timing, quality product, etc. including
changing opening hours according to unexpected situations such as weather
and sea conditions, emergency situations, ship itinerary changes etc.

DUTIES & RESPONSIBILITIES
Ensure sanitation levels are upheld
in accordance with all USPH and other
sanitation laws or guidelines
Maintain opening, running and closing duties for department including the use
of checklists
Ensure the proper execution of all special occasions, group parties, cocktail
parties and celebrations in bars, lounges or wherever specified
Responsible for all aspects of Guest relations and the quality of experience
delivered to the Guest, i.e. product, timing, service, departmental areas
Accountable to maximize daily sales and effectively manage costs and labor
Manage liquor inventory and ordering procedures
Ensure Beverage Crew follow pour procedures and standards, follow recipes
and serve quality drinks
Monitor breakage, consumption, inventories and all replaceable to be kept
within budgetary targets
Work closely with Hotel Stores Manager, ship and shore side teams to ensure
proper stock levels, deliveries, new product items, product merchandising and
displays are maintained
Inventory control (par level) ensuring of accuracy in supported by MMS
(Material Management System)
Facilitate department meetings
Provide leadership for all direct reports; Responsibilities include, but are
not
limited to:
Managing personnel files
Conducting performance reviews, including discipline as needed
Ensuring Project Onboard compliance
Monitoring STAR, while making necessary corrections
Onboard training, new hire and ongoing
Succession planning
Crew recognition and communication
Minimum experience and qualification
requirements for position:

Minimum four yearsâ experience in a
leadership role in Beverage management in a multiple outlet operation
·
Hotel Management degree or
equivalent preferred; Additional experience will be taken into consideration in
lieu of degree
Contract length: 4 months on/2months off
